Dinner tonight- great for those low carb people too.

Garden Summer Staple

My Mother-in-Law made this for us while she was here and I have made it at least weekly since then.

Brown 1-2 pounds of ground beef along with one small onion, diced.
Season with fresh oregano, basil and some salt.

Drain off juices from the browned meat and layer it in a casserole dish.
Slice zucchini and layer it over the beef.
Slice tomatoes and layer them over the zucchini.
Sprinkle chopped fresh basil over the tomatoes and top with grated sharp cheddar cheese.

Bake in oven at about 400 until zucchini is cooked to your liking and the cheese is melted browned and maybe even a touch crispy. I don’t know, maybe for a half an hour or so.

Dish out into pasta bowls and enjoy.
*My son likes to shake a little Texas Pete hot sauce on his portion. But then my friend, Maria said “he likes to do that with everything doesn’t he?”
